The Green Soup: Peas and Mint Soup

Peas-and-mint-soup
This is the recipe of a warm and quick pea and mint soup, that we call the “green soup“.

How many times we have bought the “ready to eat only heat” mint and peas soup since we have been living in Ireland.

When we come home too late for cooking, this soup has often been a life saver.

We’ve always checked that the ingredients were fine but the fact of buying a pre-made dish always leaves me not totally happy.

As the peas and mint soup is one of the few soups that my son Dedeo actually likes, I decided that I could easily make it myself!

Now when I say “I think I am going to prepare a soup” he pleads me: “Please can you make the ‘green soup’?!!”

Ingredients For Peas And Mint Soup

  • 1 liter of water
  • 1 shallot
  • 800 g of petit pois peas (frozen or fresh)
  • 4 spring onions
  • leaves of 8 sprigs of mint
  • extra virgin olive oil
  • black pepper
  • salt

How To Make Peas And Mint Soup

Heat some extra virgin olive oil in a saucepan and add the finely sliced shallot.

After 5 minutes add 1 liter of water and bring to the boil and add salt.

At this point insert the peas in the boiling water together with the spring onions washed and chopped. The peas can be frozen or even better fresh, if you can get them.

Let it simmer for 30 minutes.

In the meantime chop the leaves of mint and add them to the soup, once it has cooked for 30 minutes.

Blend it until smooth, serve it with a dash of extra virgin olive oil and some black pepper freshly ground if you like.

Enjoy it with fresh homemade bread, as we did yesterday, or home made croutons.

    The soup was very very nice!! But today here we have 35 degrees… And My husband’s comment was: “fantastic to have a hot soup today!!… May be I warm it a bit more!!!!”
    Anyway it was great!!!
    The next recipe I’ll try is..brownies!!!!!

    Ha ha ha! My husband would have made the exact same comment! We are “lucky ” here to be able to enjoy a hot soup thanks to the chilly breeze!!
