I’m Maggie, I am a full time Italian mom of three, living in Ireland, a bit obsessed with cooking and baking.
My three kids are: Datti (15), who was diagnosed with brain cancer at 7 and now is a sweet disabled girl as a side effect of her treatment, Dedeo my 13 years old boy who helps us so much and Deta who is 9 and always looking for attentions.
They are not their real names of course! I like to use as names the ones they used to call themselves when they were toddlers!
I hope you can forgive my English mistakes but probably they will help you picture me talking with my strong Italian accent!
I have always considered myself a healthy eater and feeder!
There’s always been plenty of vegetables in my dinners, my kids don’t particularly enjoy juices, except for the homemade ones, and I wouldn’t buy sweets or bars or crisps unless if it was for a party.
Having said that, there were plenty of cakes and biscuits in the house baked by me. I probably cooked meat twice a week as a main, but it was present in other dishes in form of cold meat or diced bacon.
In September 2014, after a few readings about healthy diets, and especially diets to prevent cancer, we decided not to consume meat in the house anymore (even if we still eat it if we are at friends or eating outside), to reduce dairy and eggs and sugar and to eat and cook whole cereals.
It was and still is definitely a challenge for me – used to bake every second day with eggs and dairy and to add a bit of cold meat or cheese sometimes to give my dishes a kick…but I must say that I am very pleased with some of the results.
I still manage to prepare homemade treats very often, only they are different.
Sometimes I happen to be very disappointed with myself and to hear my inner voice saying : “You used to bake such wonderful cakes….”
But other times when the dessert is lovely the satisfaction of creating something yummy without sugar and butter is unbelievable.
