My little one, Deta often asks me for crackers. I decided to bake them at home: here is my recipe for spelt and sesame seeds homemade crackers.
We all, actually, love crackers! But I stopped buying them anymore in the supermarkets, as they contain unhealthy fats, expecially palm oil.
I know I promised that my next post would have been the Green Pie but today I kneaded two doses of the “crazy dough” with the intention to bake two green pies (a big one and a small one) and crackers.
As I used spelt flour and added sesame seeds in the dough the result were this crunchy wholesome snacks!
Of course you can make great crackers with plain flour too or whole wheat flour too, I’ve done it already!!
So you just follow the instruction for pasta matta by substituting the plain flour with spelt flour and adding a handful of sesame seeds.
Roll the dough very thin and cut it in squares, rectangles, triangles or you can even give them nice shapes with biscuits cutters.
I chose to overlap two corners of a square or triangle leaving a sort of tunnel underneath, they turn out to be nice and twirly but to be honest it took a good bit more than it would have taken to simply cut out squares.
Before entering the oven I slightly brush them with extra virgin olive oil and dust them with sea salt.
180° for 15 min, check for crunchiness and to avoid to burn them.
Store them in an airtight container.
We ate a tin in the afternoon while playing a board game together and tomorrow they will go in the lunch boxes!
Late tip: the easiest way to bake these cracker is to roll the dough thin and place the whole sheet in a flour dusted tin and then cut them partially in the tin ( they don’t need extra space because they won’t grow cooking).
Once cold you can brake them following the cutting line you made with the knife.
