These Sugar Free Vegan Raw Brownies are highly addictive and the great news is that they are also healthy!
It all started because I love brownies even if I have only ever eaten them in The States and here in Ireland…(they are not in the Italian culinary background!)
Well I guess it is rare not to like them…
I even achieved the perfect recipe for me from my dear friend Heidi with lots of whole walnuts in them…
Well now I am getting a little bit too nostalgic as with all the butter and sugar they are not part of my diet anymore except for special occasion!
I started searching for vegan brownies recipes and I found the raw ones.
Since then I have tried lots of variation to achieve the ones I like most and today I am gonna share them with you.
They are another thing from the baked one, don’t let yourself be fooled by the name, but they are fabulous as well.
And you can eat a lot of them no problem!
Ingredients for Sugar Free Vegan Raw Brownies:
I used a mug as a measurement but you can use any type of cup, depending on the quantity you want to have, to us they are never enough!
- 2 mugs or 345 g dates (if you don’t have a powerful food processor chop them finely before processing them or use medjool)
- 1 mug or 200g almonds
- 1 mug and 1/2 or 110g plus 55g walnuts
- 3/4 mug or 100 g cocoa powder
- Pinch of salt
How to prepare Sugar Free Vegan Raw Brownies:
Place the pitted dates in your food processor and reduce them to a paste. Maybe it will take a while if you need to let your food processor rest for cooling down.
Empty the food processor and set the paste aside.
Place 1 mug of walnuts plus the almonds in the food processor and reduce them to flour.
Add cocoa and salt and mix again.
While the food processor is going add the dates a little of the paste at a time.
When you see that all the ingredients are well mixed together place them in a rectangular or squared baking dish.
Scatter the remaining half a mug of walnuts on top.
Press very well with your hands or a spoon until the surface is flat and compact.
Place the dish in the fridge at least for an hour before cutting the Raw Brownies in square or rectangular shapes.
Didn’t I warn you they are addictive!
