A healthy Mayonnaise with a kick of mustard!
We hardly buy Mayonnaise, it has never been in our culture to have it in the house and it was the same when I was a kid.
Having said that, I can’t deny I like it!
But in my head it is so unhealthy that when I came across this recipe I had to try it. It’s good because it has that mustard kick that is nice sometime in a sandwich!
The recipe comes from an Italian book:”Prevenire in cucina mangiando con gusto” by Anna Villarini.
Ingredients for Tofu Mayonnaise Mustard Flavour
- 300g silk tofu
- The juice of half a lemon
- 5 tbs extra vergin olive oil
- 1 tbs mustard
- A bit of salt
- And a bit of turmeric
Instructions for Tofu Mayonnaise Mustard Flavour
Boil tofu for a minute or so (I usually place it in a stainless steel sieve that I put in the boiling water, like that I avoid that it crumbles when I need to drain it)
Blend the tofu with the other ingredients, add the oil at last, slowly until the mixture reaches the right consistency.
Placed in a glass jar will last in the fridge up to 3 days.
