These Sugar Free Vegan Flapjacks are so rich of seeds that every bite is a great pleasure and the zest really gives them a kick.
We discovered flapjacks in Ireland.
Yes, it may sound weird but I never tasted such a thing as a child. In Italy, in fact, oat flakes are not as common as here and porridge is almost unknown!!!
Anyway, we embraced both with lots of enthusiasm!
This is a very healthy version of the rich classic flapjack. In my version there is no sugar and no dairy!
Here is the sugar-free vegan flapjacks recipe:
Ingredients For Sugar-free Vegan Flapjacks
- 4 cups (340g) porridge oats
- 10 very large tablespoons of any nut butter (I have used 4 of Tahini and 6 of peanut butter)
- 2 mashed bananas
- 6 tablespoons maple syrup
- 1 cup (125g) of sunflowers and pumpkin seeds
- 1/2 cup (60g) of linseeds
- a handful of almonds or walnuts or a mix
- 2 handfuls of raisins
- Zest of two organic oranges or two organic lemons
Instructions For Sugar-free Vegan Flapjacks
Heat the oven 160 degrees.
Place the nut butter and the maple syrup in a pot and melt it, add the mashed bananas and stir well on the fire.
In the meantime mix all the other ingredients in a bowl.
Pour the melted mixture on the dried ingredients and stir well to make sure that all the oats, seed and nuts are coated with it.
Place in a large rectangular tin covered with baking paper, press well and bake it in the oven for 45 minutes.
When it has cool down cut it in squares or rectangles and store them in a airtight container or in a tin box.
Don’t leave out the zest if possible because it really gives them an extraordinary flavour.
